Salt-Free Bacon

Enjoy your favorite breakfast staple with a kick of cayenne, paprika and black pepper. Paprika comes from the capsicum peppers which  gives them their bold flavor! 

Ingredients

  • 1 lb pork belly, sliced thin
  • 2 tbsp maple syrup
  • 1 tbsp smoked paprika
  • 1/2 tsp cayenne
  • 1-2 tsp black pepper

Directions

 Preheat oven to 200 F.

Prepare pork belly – cut off and remove the top layer of skin. 

Cover two baking pans with tin foil and place wire cooling racks over top – put the pork belly on the cooling racks, careful not to over crowd.

Mix the dry spices.

Rub pork belly slices with maple syrup and the spice mix, then place in a single layer on a cooling rack, positioned over a baking sheet and bake for 1 hour.

Before serving preheat a large pan and crisp the bacon to your desired taste.
