Simple Fennel and Green Apple Salad

Fennel is a delicious, underutilized vegetable that is good for digestion. It has a texture similar to celery but tastes like licorice. You can roast it or eat it raw like in this salad recipe from viewer Amy Cao.

Serves 2


  • 1 fennel bulb
  • 1/2 Granny Smith green apple
  • 1/2 lemon
  • 2 tbsp extra-virgin olive oil
  • salt
  • pepper


Thinly slice fennel. Add to large bowl.

Peel and thinly slice green apple. Add to large bowl.

Squeeze fresh lemon juice in bowl. Drizzle with olive oil.

Add salt and pepper to season. Lightly toss everything in large bowl. Serve in individual bowls. Enjoy!
