Steamed Noodles with Chicken and Tofu

  • 8 oz chinese noodles, steamed in salted water
  • 8 oz chicken pieces, steamed in salted water
  • 6 oz firm tofu, cut in cubes
  • 1 clove garlic, diced
  • 1 red onion, diced
  • 1 tsp shrimp paste
  • 1 spring onion
  • 1 oz bean sprouts
  • 1 oz fish sauce
  • 1 oz soy sauce
  • 1 oz roasted peanuts, (optional)
  • 1 oz eggs, (optional)
  • 2 tbsp olive oil
  • 1 pod of chilli, finely diced
  • 1 lemon juice and zest
  • 1 oz veggie broth
  • 1 oz fresh coriander, chopped
  • salt and pepper to taste


In a large frying pan, add the olive oil, stire the onions and garlic.


Then add the shrimp paste, stir well. Add the spring onions, sprouts, fish sauce, soy sauce, chilli and stir.


Deglaze with the broth, and let simmer for a minute.


Now, add the eggs, while stirring constantly. Then add the tofu, noodles and chicken, making sure sauce is evenly distributed.


Finally, add the roasted peanuts, lemon and zest. Sprinkle fresh coriander on top.


Serve immediately. Enjoy!
