Steve Weatherford shares his tailgate favorite that is simple to make and easy to clean up. Use meat as a pizza-crust substitute to cut down on carbs while enjoying the tenderness and juiciness of a steak. All you have to do is wrap the ingredients in foil and pop them in the oven for an easy meal.


  • 8 oz lean filet mignon, cut into 2-inch cubes
  • 2 cloves garlic
  • ½ Spanish onion
  • 2 slices yellow pepper
  • 2 slices red bell pepper
  • 2 baby portobello mushrooms
  • ½ ripened tomato, chopped
  • 1 tbsp fresh basil, chopped
  • 1 tbsp extra-virgin olive oil
  • 1 fresh bay leaf
  • ½ tsp salt
  • ½ tsp black pepper


1. Preheat oven to 350°F. Place the filet mignon onto the foil. In a bowl combine all of the ingredients. Mix ingredients well and place on top of the beef. Wrap in foil. Bake in the oven for 18–20 minutes.
