Sun-Dried Tomato Spinach

Loaded with anti-inflammatory antioxidants, this recipe boosts bone health, protects your eyes and is a great source of omega-3.

Ingredients

  • 1 tbsp grape seed oil
  • 1 large onion, diced
  • 5 oz baby spinach
  • 1 cup sun-dried tomatoes, chopped
  • 1 lemon, juiced

Directions

Heat the oil in a medium large pan and saute the onions until they start to turn golden.

Stir in the tomatoes and cook for two minutes, then toss in the spinach and cook, stirring until the spinach is just wilted (not more than one or two minutes).

Stir in the lemon juice before serving.

Makes two servings.
