Sweet and Salty Pork Belly

Treat yourself to this unprocessed version of bacon. With only a few ingredients, it's a more natural way to eat your bacon than what you find in the store. Indulge in this sweet and savory meat that will go perfect with any dish.


  • 2 lbs pork belly
  • 2 tbsp brown sugar
  • 1 tbsp salt
  • 1 tbsp celery seeds
  • 1/2 tsp baking soda


1. Wipe the pork belly with a damp towel, and score the skin in a crosshatch pattern.


2. In a small bowl, mix the sugar, salt, and celery seeds. Thoroughly massage the mix into the pork. Sprinkle the baking soda on the skin side only and rub.


3. Place the pork on a small sheet pan and refrigerate uncovered for at least 6 hours, or overnight to dry out the skin as much as possible.


4. Preheat the oven to 425 degrees.


5. Wipe the skin side of the pork with a paper towel, making sure it's dry, and place the belly skin side up on a baking rack.


6. Bake for 15 to 20 minutes, reduce heat to 275 degrees and continue baking for another 90 minutes.


7. Remove pork from the oven and let sit for about 20 minutes, then slice into portions.


8. If there are any leftovers, let the pork cool completely, then wrap tightly in foil and refrigerate.
