- 2 whole eggs
- 2 egg whites
- 1 cup spinach
- 1/2 cup tomatoes, diced
- 1/2 cup mushrooms
- 1/2 cup avocado, diced
- 1/2 cup shredded low-fat cheese
- 1 slice 100% whole grain toast
Scramble eggs and egg whites together and add to pan over medium heat.
Add spinach, tomatoes, mushrooms, avodaco and cheese on top of eggs on one side of pan. Fold other half over top.
Heat until eggs are cooked.
Toast bread and serve on the side.
