Watermelon Blue Cheese Salad

The combination of watermelon and blue cheese is a unique and wonderfully complex flavor that will keep you wanting more. Just make sure that you don't crumble the blue cheese too small or else the watermelon to cheese ratio will be unbalanced. 


  • 3 cups watermelon chunks
  • 1 medium English cucumber sliced into 1/4 inch rounds
  • 1/4 cup blue cheese, crumbled
  • 1 small sweet onion halved crosswise and thinly sliced
  • 1/4 cup white balsamic vinegar
  • 2 tbsp Austrian pumpkin seed oil
  • 1/2 tsp sea salt
  • 1 tbsp pure maple syrup
  • 1/4 cup toasted walnuts


In a large bowl combine the watermelon, cucumbers, blue cheese and onions.

In a small bowl whisk together the vinegar, oil, salt, and maple syrup.

Gently toss the salad with the dressing; top with the still-warm nuts and serve.

Yields 6 cups.
