Yummy Bean Mayonnaise

This eggless reduced-fat version of mayonnaise is high in protein and vitamins. Try this on a sandwich for the full flavor of some of your favorite spreads without all of the unhealthy ingredients.   

Ingredients

  • 1/3 cup raw almonds
  • 2/3 cup cooked gigante beans (or other white beans)
  • 2 cloves garlic, chopped
  • juice of 1 lemon
  • pinch of salt
  • 1/4 cup olive oil
  • broth or water (to thin to desired consistency)

Directions

Process almonds, beans, garlic, lemon juice, salt and olive oil until smooth.

Add water or broth to achieve desired consistency.

Makes 1 cup.
