Sheila Haines' Bean Burritos

Ingredients

  • 6-8 100% whole wheat tortillas
  • 1 can (14-15 oz) pinto or black beans, drained and rinsed
  • 1 package taco seasoning for fajita seasoning
  • 1/4 cup water
  • 1 red bell pepper
  • 1 package store-bought guacamole
  • lettuce
  • red onion
  • 5-6 plum tomatoes

Directions

Heat beans in medium pot over medium heat, add the 1/4 cup water and package of seasoning.

Stir and let cook for 5 to 6 minutes. Remove from heat. Cut pepper, lettuce, tomatoes and onions into 1/4-1/2 inch slices to prepare to assemble on burrito.

Spread 1 tbsp of guacamole on the burrito shell and then add desired vegetables and lettuce. Add beans on to shell and wrap burrito.
