Sheila Haines' Bean Burritos

 6-8 100% whole wheat tortilla shells

14-15 oz can pinto or black beans, drained and rinsed

1 package taco or fajita seasoning, you choice of flavor

1/4 cup water

1 red bell pepper

1 package store-bought guacamole

Choice of lettuce 

Red onion

5 or 6 plum tomatoes



Heat beans in medium pot over medium heat, add the 1/4 cup water and package of seasoning.

Stir and let cook for 5 to 6 minutes. Remove from heat. Cut  pepper, lettuce, tomatoes and onions into 1/4-1/2 inch slices to prepare to assemble on burrito. Spread 1 tbsp of guacamole on the burrito shell and then add desired vegetables and lettuce. Add beans on to shell and wrap burrito.
