Bean Soup

Yields 6 cups

2 (15.4 oz) cans organic refried beans

1 (14.4 oz) can organic fire-roasted diced tomatoes

2 cups chicken stock

1 tsp cumin

1/2 cup sliced scallions or chopped parsley (optional)

1/2 cup Greek yogurt (optional)



Combine the refried beans, tomatoes, chicken stock and cumin in a medium-large pot and simmer, stirring occasionally. If you like a creamy consistency, purée all ingredients either in a blender in batches or with an immersion blender until smooth. Serve topped with yogurt and scallions or parsley.
