Booty-Blasting Burger

1 lb salmon, 1/3 chopped in machine; the rest hand chopped to about 1/8-inch pieces

1/2 cup black beans, drained, rinsed and mashed

1 small clove garlic, finely chopped

2 tbsp white wine

1/4 tsp cayenne pepper

2 tsp ponzu sauce

2 tbsp extra virgin olive oil

2 tbsp finely chopped ginger

3/4 cup Vidalia onions

Zest of 1 lemon

Freshly ground pepper

Pinch of salt



Mix all ingredients together in a large bowl.


Form patties by hand. An ideal size is 3/4” thick.


Over medium heat, heat olive oil. Cook patties 5 minutes on each side or until slightly golden.


Serve with a whole wheat bun, brown rice and a side salad with vinaigrette.
