Chef Jose’s Adobo Marinade
Makes 3 cups
6 cloves garlic
1 cup vegetable oil
6 chilies from the can of chipotles, de-stemmed, but otherwise left whole
4 tbsp fresh thyme leaves (fresh is preferred)
1 cup cider vinegar
Put all of the ingredients in a blender and combine.
