Chia Lentil Soup

This easy-to-make recipe is packed with lentils and healthy spices, as well as an Oz-approved favorite – chia seeds!

Makes 4 servings

Ingredients

  • 2 cups water
  • Sea salt
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 capful of vinegar
  • 1 cup lentils
  • 1/2 tsp cayenne pepper (optional)
  • 1/4 cup chia seeds

Directions

Bring water to boil with salt, olive oil, paprika and vinegar.

Add lentils. Allow lentils to boil and soften, then add cayenne and chia seeds. Bring to a slow simmer for 20 minutes.
