- 1 1/2 cups organic rolled oats
- 2/3 cup whole-wheat pastry flour
- 1/3 cup pure cocoa powder
- 1 cup dried cherries
- 6 tbsp ghee butter
- 3 oz dark chocolate chips
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup packed brown sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 egg
Preheat oven to 350°F.
In a large bowl combine flour, oats, baking soda, cocoa powder, salt and cinnamon.
Melt butter in a small saucepan or in microwave.
Add brown sugar and mix until semi smooth. Add sugar/butter mix to flour mix;. Using an electric mixer, blend well.
Add cherries, vanilla, and egg; beat to blend ingredients. Add chocolate.
Scoop about 1 rounded tablespoon of dough at a time on to a baking sheet, leaving about 2 inches between each scoop.
Bake for 10-12 minutes, or until edges are golden. Let cool on pan and serve.
