Dave Lieberman's Almond and Herb Baked Halibut

1/2 cup olive oil

Juice and grated zest of lemon

1/2 cup sliced raw almonds

2 cloves of garlic

1/4 cup finely chopped parsley

4 (6-oz) pieces of halibut


Toss olive oil, lemon juice and zest, almonds, garlic and parsley into a mixing bowl.


Place halibut on a large baking sheet lined with aluminum foil. Season lightly with salt and black pepper and drizzle with olive oil.


Divide almond and herb mixture among 4 pieces of fish and smooth over each piece to create a smooth coating.


Bake at 400degF until almond mixture is slightly brown and fish is cooked through and flakes easily; about 15 minutes.
