Curried Chicken Salad With Baby Spinach
1 cup plain fat-free yogurt
3 tsp curry powder
1/2 cup mandarin oranges packed in water, drained
2 cups cubed cooked chicken breast
1/2 bag baby spinach, raw
1/4 cup slivered almonds
Mix curry powder into yogurt. Gently fold in oranges and chicken.
Place chicken salad on baby spinach leaves and top with slivered almonds.
Chef's Notes: Sweet and spicy and so quick to put together. Watch for boneless skinless chicken breasts to go on sale. Bake or poach. Cut into cubes and freeze in 2-cup portions. Buy a bag of prewashed baby spinach and use half for this recipe.
