Ginger Salmon by Barbara Clarke



8 oz salmon 

5 slices of ginger

1 orange

2 cloves garlic

Fresh cilantro to taste

Thyme to taste

A pinch of salt and pepper (to taste) 

1 tbsp extra virgin olive oil



Season the salmon with salt and pepper in a microwavable bowl. Chop garlic, cilantro and thyme and add the herbs to the bowl. Cut the orange in two and squeeze the juice into the bowl. Peel ginger and cut 5 thin slices and add to the mixture, then add a tablespoon of extra virgin olive oil. 


Once all the ingredients have been added to the salmon, massage the fish in the marinade for about 5 seconds making sure that all the flavors of the herbs are absorbed into the fish.


Place a clear wrap over the bowl and place it in the microwave on steam for 5 minutes. Serve salmon with steamed broccoli or any vegetable of your choice.
