Buttermilk Ranch Dressing
Don't let the name fool you: Buttermilk is low in fat and calories. Keep the creamy and tangy flavors of your favorite ranch dressing, but enjoy it at fewer calories with this modified recipe.
Traditional ranch dressing: 140 calories
Food Network ranch dressing: 20 calories
2 scallions, chopped
1/2 tsp minced garlic
1/4 cup buttermilk
1/4 cup plain yogurt
2 tsp rice vinegar
Sugar and salt, to taste
Purée chopped scallions, minced garlic, buttermilk and plain yogurt with rice vinegar and a pinch of sugar and salt. Use on two heads butter lettuce with a 1/4 cup shredded carrots, some fresh cilantro and parsley.
Curried Potato Salad
Enjoy potato salad without the guilt or bulk. Use Greek yogurt instead of mayo, and add green beans to cut down on the amount of potatoes you'd normally eat using a more traditional recipe.
Traditional potato salad: 358 calories
Food Network potato salad: 250 calories
1/4 cup olive oil
1/4 cup golden raisins
2 tsp curry powder
1 cup Greek yogurt
2 cups green beans, cooked and chopped
2 pounds russet potatoes, cooked and chunked
Heat olive oil and golden raisins over medium heat; add curry powder, and stir until fragrant. Mix with Greek yogurt, green beans, and the cooked and chunked russets. Season to taste. Let cool.
