Ginger Swiss Chard Chicken Stir Fry

Serves 4


3 cups rotiserri chicken chopped no skin

2 small yellow squash cut into 1 inch pieces

1 red pepper diced into small pieces 1/2 vadalia onion diced

1 tsp chopped garlic

2 1/2 tbsp ginger

1 bunch of Swiss chard cleaned and chopped (no stems)

1/4 cup low-sodium soy sauce

Salt to taste

Pepper to taste

Brown rice or whole grain rice



In a large wok or skillet heat 4 tbsp of olive oil add squash, red pepper, onion, garlic, ginger, salt, and pepper. Sautee until squash begins to soften. Add chicken, Swiss chard, rice wine, vinegar, and soy sauce. Continue to sautee until Swiss chard is wilted. Serve over brown or whole grain rice cooked per package instructions.
