Makes 2 servings
1/4 cup chopped walnuts
1 large Red Delicious or Gala apple, skin on, cored and diced
1 cup extra-firm tofu, drained well and cut into 1-inch cubes
1/2 cup chopped celery
1/2 tbsp flaxseed, ground
1/2 tsp grated fresh ginger
1/2 tsp curry powder
1 tbsp walnut oil
1 head endive, separated and washed
Sprinkle nuts in a single layer on a cookie sheet and toast at 350°F for 10 to 15 minutes, stirring occasionally.
In a large bowl, combine the apple, tofu, celery, walnuts, flaxseed, ginger, curry powder and oil. Arrange endive in layers on salad plates. Spoon the apple-tofu mixture on the endive and serve.
