Ingredients

  • 1 1/2 cups eggplant
  • 1 cup red onion
  • 2 tbsp rosemary
  • 1 garlic
  • 1 tbsp olive oil
  • bread

Directions

In a medium to large bowl, combine all ingredients and mix well. Let the mixture rest for 30 minutes, so flavors can develop. Serve on toasted bread slices.
