Cinnamon Sweet Potato Pancakes

Serves 1


1 small sweet potato

1 whole egg

1/2 cup liquid egg whites

1 tbsp 10% goat yogurt, plain

1 tbsp chia seeds

1/2 tsp vanilla extract

1/2 tsp ground cinnamon

Non-stick cooking spray


Bake or boil sweet potato until tender. Cool slightly, and remove the skin with a small knife.

In a medium-sized bowl, mash the sweet potato until smooth. Stir in egg, egg whites, yogurt, chia seeds, vanilla and cinnamon; mix well.

Lightly grease a skillet with cooking spray and place over medium heat. Using 1 heaping tablespoon of the sweet potato mixture for each pancake, cook pancakes, flipping when bubbles form. Remove from pan when pancakes are firm.
