Hungry Girl's Meal Expanders: Seltzer

Believe it or not, with meal expanders, even the most decadent desserts aren't off limits! Swap out the butter, cream, and eggs in your favorite baked goods for flavored seltzer water. Using seltzer will make your cakes and cupcakes fluffier and whiter, while eliminating hundreds of calories. With all the great seltzer flavors available – orange, pomegranate, raspberry –  you can make the same cake over and over again without getting tired of it.

Flavored Seltzer Cake


Ingredients

Makes 12 servings


1 box moist-style white cake mix (15.25 - 18.25 oz.)
12 oz. (1 1/2 cups) flavored seltzer water


Directions
Preheat oven to 350 degrees. Spray a 9"x13" baking pan with nonstick spray. In a large bowl, whisk cake mix with seltzer until smooth. Pour into the baking pan.


Bake until a toothpick inserted into the center comes out clean, 35 - 40 minutes.
