Morning Meta-Muffins

Makes 12 muffins; Each muffin has 1 dose of Metamucil (serving size: 1 muffin)

 

Ingredients

1 cup of fat-free milk

1 egg

1/2 tsp vanilla

1/2 cup applesauce

1/2 tsp of cinnamon

1 cup flour

1 tsp baking soda

1 tsp baking powder

2/3 cup of brown sugar

1/2 tsp of salt

1 cup blueberries

12 tsp Sugar-Free Original Smooth Metamucil

 

Directions

Pre-heat oven 375°F. Mix milk, egg, vanilla, applesauce, cinnamon and sugar. Drink 8 oz of water with each recipe.

 

In separate container mix flour, baking soda, baking powder and salt. Slowly add flour mixture to milk mixture once well mixed disperse blueberries, then quickly add and disperse the Metamucil and pour into muffin tin.

 

Bake 15 to 20 minutes until middle is done.

Psyllium fiber is recognized by the FDA to treat occasional constipation and help lower cholesterol. Diets low in saturated fat and cholesterol that include 7 grams of soluble fiber per day from psyllium husk may reduce the risk of heart disease by lowering cholesterol. One adult dose of Metamucil has at least 2.1 grams of this soluble fiber. Use as directed. May contain trace amounts of gluten. This Metamucil product has a low glycemic index, a measure of the effect of dietary carbohydrates on blood sugar levels.
