Hungry Girl's Big Blue Buffalo Jala’ Poppers
Makes 4 servings
1/2 cup bran cereal twigs (like Fiber One Original)
1/4 tsp onion powder
1/4 tsp garlic powder
Dash cayenne pepper
4 wedges The Laughing Cow Light Creamy Swiss cheese
2 tbsp Frank’s RedHot Original Cayenne Pepper Sauce
3 tbsp crumbled blue cheese
6 jalapeño peppers, halved lengthwise, seeds and stems removed
1/4 cup fat-free liquid egg substitute
Preheat oven to 350°F. Spray a baking sheet with nonstick spray.
In a blender or food processor, grind cereal into crumbs. Transfer to a wide bowl and mix in seasonings.
In a small bowl, thoroughly mix cheese wedges with 1 tablespoon hot sauce. Stir in blue cheese. Evenly spoon and spread mixture into the pepper halves.
In another wide bowl, mix egg substitute with remaining 1 tablespoon hot sauce. One at a time, coat pepper halves with egg mixture, shake to remove excess, and coat with crumbs. Evenly place on the baking sheet, stuffed sides up.
Bake until outside is crispy and pepper halves have softened, 25 to 30 minutes. Enjoy!
