Scooped Turkey Burger

South Lawn Garden Herb Mayonnaise



1 egg white

1/2 tsp salt

1/2 tsp black pepper

1 cup olive oil

1 bunch parsley

1 bunch cilantro

1 bunch dill

1/2 cup fresh rosemary

1/2 cup fresh thyme

Juice of 8 lemons

1 tbsp minced garlic



Blend the egg white, salt and lemon juice in a blender until combined; slowly stream the olive oil into the mixture while blending, about 1/4 cup at a time, until thick. Add all the herbs and minced garlic. Mix together. Refrigerate in an air-tight container until ready to use.



Take the buns and “scoop” out the top and bottom so your patty can fit within the bun. To assemble the burgers, place one patty on a bun bottom into the “scoop”. Top the patty with fresh spinach and a dollop of the South Lawn herb mayonnaise, cover with the bun top. Repeat with all the remaining ingredients.
