1 large zucchini
1 clove garlic, minced
1 small onion, chopped
2 fresh leaves of basil, thinly chopped
1 tbsp extra virgin olive oil
1 cup pre-cooked tomato sauce
1 pinch of salt and pepper
1 tbsp shaved parmesan cheese
Cut the zucchini into 4 quarters. Use a vegetable peeler to peel long, thin pasta-like strips of zucchini into a microwavable bowl.
Add garlic, onion, basil leaves, tomato sauce, olive oil, salt and pepper to bowl. Stir all the ingredients with a large spoon and cook in the microwave for 2-3 minutes.
Pour dish into pasta bowl, and add basil and parmesan to taste.
