Ingredients
1 whole wheat flatbread
Arugula or mesclun mix
Goat cheese
Dried Cranberries
Balsamic vinegar
Olive oil
Salt and pepper to taste
Directions
Place flatbread in microwave and heat on high for 30 seconds.
In a bowl, toss together all other ingredients.
Remove flatbread from microwave and top with salad mixture. Cut into slices and enjoy!
