These beans are full of iron, magnesium, protein and fiber. Providing 17 grams of fiber per cup, adzuki beans are packed with much more fiber than other varieties, like black or pinto. At $2 a can, or 57 cents per serving, they’ll fill you up, give you a boost, and can be a substitute for animal protein in any dish.
Daikon is a large East Asian white radish that looks like a giant white carrot. This cruciferous vegetable offers cancer protection like its relatives: broccoli, cabbage and kale. Daikon is high in vitamin C and folate, and it contains digestive enzymes that help your body break down food more easily. It costs about $1 per pound and you can find it in the produce aisle either whole or pre-grated.
Just a spoonful of black rice contains the same amount of antioxidants found in a spoonful of blueberries, but with less sugar and more vitamin E. Black rice is prepared in the same way as other kinds of rice, but it may take an extra few minutes for all of the water to be absorbed. Black rice costs $4.49 a bag, which breaks down to 49 cents per serving.
Canned salmon contains up to four times as many omega-3 fatty acids as chunk light tuna. If you live far away from where salmon is caught, canned salmon may be a better choice than the “fresh” fish delivered to most grocery stores.
