Asparagus and Cucumber Recipes

I went over to my parent’s house this weekend. Upon my arrival, my dad said, “I just picked some asparagus from the yard, do you want a stalk?” I was standing in the kitchen, munching on chives and these “hybrid” versions of onion/garlic things as he was asking me. I’m not even sure what those were even called!

Nothing is better than fresh food. I am reminded yet again for the 1000th time! I love asparagus. I’ve been eating asparagus and cucumbers almost every day for my snacks lately. The sun has been shining and I am just in the mood lately for really crisp, light, fresh foods. I want to give you some really light and tasty recipes for making an asparagus salad and a cucumber salad. 


Asparagus Salad

 

Ingredients

2 lbs of asparagus

3 medium tomatoes

1 small red onion

Juice from two lemons

2 cloves of garlic

1 tbsp of extra virgin olive oil

Directions

Wash and dry all the veggies. Cut asparagus into bite-sized pieces and place in a bowl. Chop tomatoes and cut red onion into small slivers and add into the bowl. Squeeze the lemons until all the juice is out of them, crush the two garlic cloves and add olive oil into the bowl. Toss and chill. So easy!

Cucumber salad

 

Ingredients

4 cucumbers

1 medium red onion

1 red pepper

1/3 cup lemon juice

1/4 cup agave or honey

1/3 cup water

2 crushed garlic cloves

1/8 tsp cayenne pepper

1 tbsp of olive oil

Directions

Peel and slice the cucumber into very thin rounds and place in a large bowl. Sliver the red pepper and onion into bowl. Add lemon juice, water and honey. Finally put all other seasonings into the bowl as well. Toss really well and let chill for a half hour before eating so that it can marinate the cucumber really well. 

These two dishes are so simple and easy to prepare.   They are light and fresh and taste so good on a warm day!  They take no time to prepare at all so you can spend more time enjoying the fresh air outside while eating them!  Enjoy!

For those of you who have put on the Pandemic Pounds or added several new COVID Curves, you are not alone. Alarmingly, the American Psychological Association has recently published that almost half of all adults in their survey now have a larger physique. In fact, 42% of people reported gaining roughly 15 pounds (the average published was surprisingly 29 pounds but that included outliers) over the past year. Interestingly, 20% of adults in this survey lost about 12 pounds (I am surely not in this group). Clearly, there is a relationship between stress and weight change. In addition, one in four adults disclosed an increase in alcohol consumption, and 67% of participants distressingly revealed that they have new sleeping patterns.

This past year has brought about what has been called the 'new normal.' Social isolation and inactivity due to quarantining and remote working have sadly contributed to the decline in many people's mental and physical health, as demonstrated by the widespread changes in people's weight, alcohol consumption, and sleeping patterns. Gym closures, frequent ordering of unhealthy takeout, and increased time at home cooking and devouring comfort foods have had a perceptible impact. In addition, many people have delayed routine medical care and screening tests over fear of contracting Covid-19 during these visits. Unfortunately, the 'new normal' has now placed too many people at risk for serious health consequences, including heart attacks and strokes.
