Asparagus Guacamole!

This holiday season has felt like a whirlwind. I am sure many of you can relate. There have been parties, fun, festivities and food! I absolutely have to share with you all my favorite holiday food finds. One of my fellow food lovers at work named Patrick told me all about this delicious, mouth-watering dip called asparagus guacamole. I am definitely someone who can be tricked easily. If it looks like something else, smells or resembles another kind of food I already like, I can be easily convinced I am eating something else.

There are many benefits to eating avocados, however; if you are planning on eating a lot of guacamole, my waistline does not benefit. By using asparagus as a substitute in this dip, you shave off many calories and can eat a bigger portion. I know myself, but when I am gabbing at a party, I'm the gal that likes to stand by the food and munch while I chat!


After Patrick told me about this green guacamole, I just had to make it and I really enjoyed it! The recipe is simple, easy and delicious! The ingredients and directions are below and I hope you enjoy this dip accompanied by your favorite veggies or on some whole wheat pita! It is also a great addition for a sandwich spread or if you have leftovers you could toss it over whole wheat penne pasta to add delicious layers of flavor to your meal! If you make the recipe and eat it all and leave nothing behind, you can enjoy it with no guilt! Healthy, yummy and low calorie; my 3 favorite things! Asparagus Guacamole

 

Ingredients

2 cups (approximately 1 lb) chopped lightly steamed asparagus

3 tsp fresh lemon juice

1 chopped red onion

1/4 cup of finely chopped fresh cilantro

1 large tomato, chopped

1/2 tsp chili powder

1/2 tsp ground cumin

1/4 tsp freshly ground black pepper

1-2 cloves of crushed garlic

1/2 cup plain Greek yogurt  

Red pepper flakes, salt and pepper to taste.

Directions

Combine the asparagus, lemon juice, spices and yogurt in a blender or food processor and blend until smooth. Add red onion and cilantro and blend together. Remove from the mixer and put in a bowl to chill in the fridge. Serve cold! Enjoy!

Q: I end up overeating because it makes me feel better and I never really get full. I'd like to lose weight but this makes it hard. Any suggestions?

Well, if you are overweight, obese or have diabetes you may develop leptin resistance and your "I am full" hormone, leptin, can't do its job. The hormone's signal to your hypothalamus is dampened, and you keep eating.
