Tuna Balls Recipe

This is one of my new and improved recipes! This recipe makes quite a few tuna balls so you can serve them for another meal, or freeze them in plastic bags for future meals.

Ingredients


Tomato Sauce (salsa di pomodori sugo)

2 cans crushed tomatoes

6 leaves of fresh basil (do not chop, leave whole)

6 clove of garlic, chopped and sautéed in 1 tbsp. olive oil until brown

Tuna Balls (Palle del tonno)

6 cans (6-oz) tuna in water, drained or 2 1/4 lbs. fresh tuna, filleted

4 egg whites, scrambled well 

1/2 cup diced red onion

2 cups whole wheat bread crumbs or wheat germ

1/4 cup chopped fresh parsley

4 cloves of garlic chopped finely

Salt and pepper to taste

Directions

For the sauce, combine the above ingredients and place in a  large pot.

Mix all tuna balls ingredients together and form into 2” balls. Bake in the oven until half cooked. Then place tuna balls in tomato sauce and continue to cook until tuna balls are finished. Serve and eat as meatballs, with 1 cup whole grain pasta or in a whole grain bun. One serving is a 4-oz. tuna ball(s). Be sure to weigh out your portion.
