Pegan 365 Sweet Potato Toast

This recipe quickly and easily checks off the boxes for one carb, one protein, and one fat on the Pegan 365 diet, starting off your day right! The sweet potato acts as the perfect nutritious substitute carb in your avocado toast. You can make extra at the beginning of the week, and then just reheat for a fast, filling breakfast!

1 sweet potato
1 avocado
1 poached egg

1. Preheat the oven to 400° F and line a baking sheet with parchment paper to help prevent sticking.

 

2. Slice the ends of the sweet potato off, then cut it lengthwise into 1/2-inch thick slices. Arrange the slices in a single layer on the baking sheet. (No oil needed.)

 

3. Bake until the slices are tender and easily pierced with a fork, about 20 minutes.

 

4. Place mashed avocado on top of sweet potato, then add poached egg on top.

 

5. Store any leftover sweet potato slices in an airtight container in the fridge for up to a week. To reheat for an easy breakfast, simply pop them in the toaster or microwave, top with more avocado and eggs, and enjoy again!
