Easy Avocado Toast Pasta

If you think avocado toast is good — try avocado toast pasta! With tomatoes and parmesan, it makes a deliciously trendy meal.

4.6 oz Box Pasta (Olive oil and Italian herb linguini)
1 Ripe avocado (mashed or chopped)
1/2 cup Cherry tomatoes (halved)
1/2 teaspoon Red pepper flakes
2 tablespoons Parmesan Cheese (freshly grated)
2 tablespoons Coarse ground breadcrumbs (toasted)

Cook the Pasta according to the Directions on the Box.

With 2 Minutes remaining in the cook time according to the directions on the box, add in the ripe avocado and the cherry tomato halves (stirring occasionally for the 2 minutes).

Once the pasta has cooked for those final two minutes with the avocado and the cherry tomatoes allow the pasta to stand for 3-5 minutes (following the directions on the box) then toss and serve evenly onto two plates.

Garnish each plate with 1 Tbsp freshly grated parmesan cheese, 1/4 tsp of red pepper flakes and 1 Tbsp of toasted breadcrumbs.

For an added touch, add a few slices of fresh avocado and even a poached egg to enhance the dish.

Chef Hack: To make quick breadcrumbs with your favorite bread, simply place a single slice of your chosen bread on a microwave safe plate and microwave in 30 second intervals for roughly 2 minutes or until the bread is toasted and crunchy. Break the microwave / toasted bread with your fingers to create coarse breadcrumbs then store in an airtight, food safe container until ready to use.
