2 Chicken breasts, boneless & skinless, cut into strips 1 Onion, sliced 1 Red bell pepper, sliced 1 Zucchini, sliced 2 tbsp Olive oil 2 tbsp Chili powder 1 tsp Ground cumin 1 tsp Ground coriander Kosher salt, to taste 10 Corn tortillas Toppings: 1 Lime, cut into wedges 1 cup Guacamole 1 cup Salsa Grated cheese 1 cup Sour cream or greek yogurt 1/4 cup Cilantro leaves
Preheat the oven to 400 degrees F
Place the chicken and the veggies into a large bowl and toss in the olive oil. Season with the spices and salt and arrange evenly onto a baking sheet. Place the baking sheet into the oven and bake until the chicken is cooked through and the veggies are nicely caramelized, about 20-25 minutes. Toss with tongs halfway through cooking time. Chicken should reach 165 degrees F internal temperature.
