Fresh Greek Salad With Chicken
When the heat is on, think Greek—Greek salad, that is. Toss fiber-rich chopped romaine and cucumbers with tomato slices and add healthy fats in the form of kalamata olives. For protein, chose a portion of chicken breast (simply poached or grilled). Dress it all with vinaigrette made from equal parts avocado oil (good fat bonus!) and fresh lemon juice flavored with chopped fresh mint.
