Better Pesto Sauce
With its vitamin K-packed basil and full-of-good-fat olive oil, pesto is already a winning choice when you want a healthier sauce, but the pine nuts and cheese in addition to the oil make it calorie dense. Fortunately, it’s easy to lose some of the fat without ditching the flavor.
Add 2 cups fresh basil leaves, 1 to 2 cloves garlic, and up to 3 tbsp olive oil to a blender. (Start with a drizzle of oil, increasing gradually until the sauce combines loosely.) Add 1 to 2 tbsp grated parmesan cheese and ¼ cup walnuts (they add body plus a dose of omega-3 fatty acids). If your pesto is too thick, loosen it with some water.
