Egg in a Hole
Rocco DiSpirito uses this recipe as quick, healthy snack. Simply cut an avocado in half and scoop out enough of the center to fit an egg. Crack an egg inside the divot and bake until the egg have reached desired doneness, or at 450 degrees for 10 to 12 minutes. This combination is sure to keep you full for most of the afternoon, not to mention fully satisfied. Sprinkle a pinch of salt, pepper and chive on the top of the cooked cup and eat away.
