Inspect the Fat

When you're choosing a cut of pork, make sure to examine the fat. You want to see a small amount of marbling if you do want fat included. If you are planning to cut off the fat anyway, then look for pork that is pre-cut so that the total weight reflects just the part you'll be eating, as opposed to paying extra for the total weight of pork and fat, if you're not going to eat the fat.
