Grilled Shrimp, Black Bean & Quinoa Bowl

Bring a little healthy flare to dinner with this quinoa bowl! The grilled shrimp and black beans make it filling, while the jalapeno, lime and avocado bring the flavor — perfect for the System Oz wellness lifestyle plan.

1 pound Shrimp, peeled & deveined
1 teaspoon Chili powder
3 tablespoons Olive oil
Kosher salt, to taste
1 cup Quinoa, cooked to package directions
1 Can of black beans, drained & rinsed
1 Jalapeno pepper, sliced into rings
2 Limes, zested & juiced
1 Garlic clove, minced
1/2 Red onion, sliced
1 Avocado, diced
1 cup Sliced cherry tomatoes
1/4 cup Cilantro, chopped
8-inch skewers, soaked in water

Heat a grill on medium-high heat. Place three shrimp on each skewer and season with salt and chili powder. Drizzle with 1 tablespoon of olive oil and place the skewers on the grill. Cook for 3-4 minutes per side until cooked through.

In a large bowl, combine the remaining ingredients and season with salt. Divide the mixture between bowls and top each with a shrimp skewer.
