Skillet Pizza With Ricotta, Sausage & Broccoli Rabe

Sometimes you just want to make pizza at home! This recipe takes flavor to a new level with the crispy crust in the cast iron, Italian sausage, ricotta cheese and broccoli rabe.

1 pound Store-bought whole wheat pizza dough
2 tablespoons Olive oil
1 cup Blanched broccoli rabe
2 links Spicy Italian sausage, removed from casing
1/2 Yellow onion
1 clove Garlic, minced
1 pound Mozzarella cheese
1/3 cup Ricotta cheese
1/4 cup Parmesan cheese, grated
Kosher salt, to taste
Red pepper flakes, to taste

Preheat the oven to 450 degrees F.

Stretch out the pizza dough to a round that's a little smaller than your skillet and set aside.

Heat a large cast-iron skillet over medium-high heat and add 1 tablespoon of the olive oil. When hot, add in the sausage and smash with a spatula to form crumbles. Add in the onion and garlic. Cook until the sausage is caramelized and cooked through and the onions and garlic are tender.

Remove the sausage mixture to a bowl and wipe out the skillet with a paper towel. Add in the remaining olive oil and lay the pizza dough carefully into the skillet. Cook for about 2 minutes until the bottom Is nicely browned all over and then flip. Once flipped, top the pizza with the broccoli rabe, mozzarella, sausage mixture and dollops of ricotta, and then season with salt and red pepper flake and place into the oven. Cook until the cheese has melted and the bottom is crispy, about 10-15 minutes.

Remove from the oven and transfer to a cutting board. Top with grated parm and a drizzle of olive oil if you'd like. Slice and eat!
