3 tbsp Butter 1 Garlic clove, minced 1 Onion, chopped 1 1/2 cups Vegetable broth 1 cup Arborio rice, uncooked 3/4 cup White wine 1/4 cup Grated parmesan cheese
In a microwave-safe dish, microwave the onion, butter and garlic together for 3 minutes. This will soften the aromatics and those flavors can later infuse into the rice as it cooks.
In a separate microwave-safe dish, heat up the veggie broth until it's hot but not boiling. Then add the broth and uncooked rice into the dish with the onion mixture. This is also where you can add herbs if you prefer, like thyme and rosemary. Cover the dish tightly with plastic wrap and microwave for 6 minutes.
Add the white wine to the dish and cook for another 10 minutes. By now, any additional liquid has been cooked off. Stir in the parmesan cheese and you're left with a delicious creamy risotto!
Add a dash of parsley for garnish and serve!
