Peanut Butter & Jelly Dessert Bars

Take your favorite childhood snack to the next level with these dessert bars!

Crust:
1 1/2 cups All-purpose flour (divided)
1 cup Rolled oats
1 cup Dry-roasted peanuts (unsalted)
1 teaspoon Kosher salt
1 teaspoon Baking powder
2 sticks Cold unsalted butter (diced)
2 to 3 tablespoons Water (if needed)
Filling:
2 1/2 to 3 cups Strawberries (sliced)
2 tablespoons Sugar
1 Lemon (zest and juiced)
1/2 cup Strawberry jam
Crumble:
Reserved crust
1/2 cup Chopped peanuts
1/2 cup Rolled oats
1 tablespoon Sugar

Preheat the oven to 350 degrees F and line a 9x13-inch dish. you can also use an unlined tart pan with a removable bottom.

Place the oats and the peanuts into the bowl of a food processor and pulse until a fine crumb forms. Add in the flour, sugar, baking powder, and salt. Pulse to combine and then add in the butter and pulse until the mixture begins to come together in a ball around the sides of the food processor. If the mixture is dry, add in a little water. It should have a consistency slightly wetter than a pie crust.

Press about 1/3 of the crust into the bottom of the baking dish to form an even layer and place into the oven to bake about 10 minutes until just starts to brown. Then remove from the oven.

While the crust is in the oven make the filling by combining the sliced strawberries with the sugar, lemon zest and juice, and adding in the jam. Stir to combine and set aside.

Take the remaining crust mixture and add in the oats, peanuts, remaining sugar.

To assemble, pace the strawberry filling on top of the baked crust and then sprinkle the crumble over the top. Bake for an additional 30 minutes. Remove and set aside to cool.
