Makes 15 servings (servings size: 1/2 cup)
- 2 tbsp extra-virgin olive oil
- 8 oz onion, diced into small pieces
- 1 tsp cumin
- 1/4 tsp cardamom
- 2 tsp garlic, finely chopped
- 4 cups water
- 3 tbsp vegetable base
- 2 cups dry red lentils
- 1 can (28 oz) crushed tomatoes
- 2 tsp turmeric
- 2 tbsp fresh ginger, minced
- 1 tbsp fresh jalapeno, peeled, seeded, and minced
- 4 tbsp cilantro, chopped
In a large 6-quart pot, heat olive oil. Add onions and sauté until lightly caramelized. Add cumin, cardamom, garlic and sauté 2 minutes.
Add remaining ingredients and bring to a boil. Reduce heat to low, cover, and let simmer, stirring often until lentils are tender for about 15 minutes. Serve and enjoy!
