Dolvett Quince's Spinach Chips

- 1 bag spinach
- Vegetable cooking spray
- Salt-free seasoning mix
Preheat the oven to 300°F. Line a large sheet pan with parchment paper. Wash and thoroughly dry the spinach. Tear the larger leaves into 1" to 2" strips.Place the spinach leaves in a single layer on the parchment paper. Spritz lightly with vegentable cooking spray and sprinkle with spices. Bake for 15 to 20 minutes until the spinach is dry and has darkened slightly. Remove it immediately from the pan and transfer it to a serving dish.Serve right away, or store in a brown paper bag at room temperature for up to three days.
