Peanut Oil Sautéed Veggies
Rich in antioxidants as wells as vitamin E and resveratrol, peanut oil is great for your heart.
- 2 tbsp peanut oil
- 2 small zucchini, cut into 1/4" by 2" batons
- 3 peppers (red, yellow, orange), cut into 1/4 inch strips
- 3 stalks celery, cut into 1/4' by 2" batons
- 1/2 onions, cut lengthwise into thin slices
- 1/2 lb snow peas
- 1/2 tsp salt
In a large pan heat the oil and cook the onions on medium high for about 2 minutes, until they start to brown. Add in the rest of the vegetables and the salt and cook, stirring occasionally for 6 to 8 minutes until they are softened to your liking.
