Quinoa Meatless Balls
Try this vegetarian version of the classic dish with salad or pasta!
- 2 1/2 cup cooked quinoa
- 4 eggs
- 1/2 tsp sea salt
- 1/3 cup chives
- 1 onion
- 1/3 cup parmesan cheese
- 3 cloves garlic
- 1 3/4 cup whole grain bread crumbs
- 1 tbsp extra virgin olive oil
Combine all ingredients in bowl and mix.Mold mixture into meatballs.Grease skillet with extra virgin olive oil.Brown meatballs in a skillet for 10 minutes.
