Spiced Baked Chickpeas
Lisa Oz makes this protein side for her family-favorite salad bar.
Chickpeas are a great source of protein and fiber. They also have calcium and phosphate which promotes bone strength. This recipe is a healthy way to have your protein and goes great in the Oz Family Salad Bar!
- 1 (15-ounce) can chickpeas, drained, rinsed, and dried
- 1 tbsp extra-virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp cumin, ground
- 1/2 tsp cayenne pepper
- pinch fine sea salt
1. Position a rack in the center of the oven and preheat the oven to 350°F. 2. Toss the chickpeas, oil, lemon juice, cumin, and cayenne pepper together in a small bowl. Spread the mixture in a 9 by 13-inch baking dish. 3. Bake, stirring occasionally, until the chickpeas are lightly browned, 30 to 40 minutes. 4. Season to taste with the salt while the chickpeas are still warm, and let them cool completely. (The chickpeas can be covered and refrigerated for up to 5 days.) Makes 4 to 6 servings.
