If you are having a craving for sugar, avoid processed sweets and reach for this cashew cream instead. This recipe can be made overnight and will leave you full and satisfied without spiking your blood sugar.
- 1 cup raw cashews
- 1 tbsp raw honey
- 2 drops vanilla extract
1. Cover the cashews in water and soak overnight.
2. Drain the cashews, reserving the water. Place the cashews, honey, and vanilla in a blender and blend, adding small amounts of the soaking water until the mixture is smooth.
3. Put in the fridge to set. Leave plain or top with fresh fruit and enjoy!
